Extended/Virtual Office Hours. Encouraging students to get a hold of their instructors via email make "office hours" more flexible for both students and teachers.

Student Peer Review. Email has a lot of applications for peer review. Through simple email correspondence with each other, students can add a lot to more traditional classroom peer review sessions by using email to respond to their colleagues about their drafts after an in-class peer review session. Email could also be used to hold "virtual" email sessions.

Student Email Tree. Have students exchange email addresses with each other so they can keep in touch outside of class times for information about assignments, missed classes, etc.

Journaling. Use email instead of traditional paper journals. Using Email for electronic journals has the significant advantage of being completed in a timely fashion since they are "collected" instantly, teachers know immediately when the entries were completed. Plus email journal assignments are a lot easier for teachers to carry home with them!

Instead of Synchronous/Asynchronous activities. Just about all of the ideas posted in the Synchronous and Asynchronous categories could work well here.
